- 1/4 cups (60 ml) Diced Onion
- 1/3 cups (80 ml) Crushed Wellington Garlic and Herb Crackers
- 1 tbsp Melted Butter
- 1/2 cups (120 ml) Diced Fennel
- 2 Sprigs Fresh Dill Diced
- 1/4 tsp Salt
- 1 Pinch Crushed Red Pepper Optional
- 1 tbsp Fresh Squeezed Lemon Juice
- 8 oz (227 g) Goat Cheese Log
Instructions
- Dice the onion and fennel to a similar size and consistency.
- Mix the diced onion and fennel with the crackers and fresh dill.
- Combine the melted butter, lemon juice, salt, and crushed red pepper.
- Pour the butter mixture over the fennel mixture and mix well.
- Serve atop a Wellington garlic and herb cracker with a light spread of goat cheese.
Notes
- To prevent the fennel from becoming soggy, ensure it’s thoroughly dried before mixing with other ingredients.
- For a milder flavor, reduce the amount of red pepper flakes or omit it altogether.
- This appetizer can be prepared ahead of time; simply store the fennel mixture separately from the goat cheese and assemble just before serving.
