Description

A fresh, vibrant appetizer perfect for parties or a light lunch. Sweet fennel and sharp red onion are balanced by creamy goat cheese.


Ingredients

  • 1/4 cups (60 ml) Diced Onion
  • 1/3 cups (80 ml) Crushed Wellington Garlic and Herb Crackers
  • 1 tbsp Melted Butter
  • 1/2 cups (120 ml) Diced Fennel
  • 2 Sprigs Fresh Dill Diced
  • 1/4 tsp Salt
  • 1 Pinch Crushed Red Pepper Optional
  • 1 tbsp Fresh Squeezed Lemon Juice
  • 8 oz (227 g) Goat Cheese Log

Instructions

  1. Dice the onion and fennel to a similar size and consistency.
  2. Mix the diced onion and fennel with the crackers and fresh dill.
  3. Combine the melted butter, lemon juice, salt, and crushed red pepper.
  4. Pour the butter mixture over the fennel mixture and mix well.
  5. Serve atop a Wellington garlic and herb cracker with a light spread of goat cheese.

Notes

  • To prevent the fennel from becoming soggy, ensure it’s thoroughly dried before mixing with other ingredients.
  • For a milder flavor, reduce the amount of red pepper flakes or omit it altogether.
  • This appetizer can be prepared ahead of time; simply store the fennel mixture separately from the goat cheese and assemble just before serving.
