Description

These savory falafel waffles can be loaded with a tomato and cucumber salad, harissa, tahini sauce and more.

Falafel Waffle

  • 1 cup dried chickpeas
  • 1/2 small onion (diced)
  • 3 garlic cloves (minced)
  • 3 tablespoons chopped parsley
  • 3 tablespoons chopped cilantro
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander seed
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne

Instructions

Falafel Waffle

  1. Soak the chickpeas 8 hours or overnight in cold water. Drain.
  2. Combine the soaked chickpeas, onion, and garlic in a food processor. Pulse until blended but not pureed. Add the parsley, cilantro, flour, salt, cumin, coriander, baking powder, black pepper, and cayenne and pulse until just combined.
  3. Heat your waffle machine. Form the chickpea mixture into six patties, gently pressing together so they hold together. Place patties in waffle machine, lower the lid, and cook anywhere from 5-10 minutes, depending on your machine. The falafel is done when it is golden brown and crispy.
