Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Press mixture into the bottom of a 9-inch pie pan.
- In a large bowl, beat cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
- Add eggs one at a time, beating well after each addition.
- Pour cream cheese mixture over crust.
- Bake for 35 minutes or until the center is set.
- Cool to room temperature, then refrigerate for at least 4 hours.
