Ingredients

Units Scale
  • 1.5 sticks (3/4 cup, 177 ml) unsalted butter
  • 3/4 cups (177 ml) light brown sugar
  • 1/4 cups (59 ml) granulated sugar
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 2 cups (473 ml) all purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cups (118 ml) semi sweet chocolate chips
  • 0.5 cups (118 ml) chocolate chunks
  • 0.25-0.5 cups (59-118 ml) dulce de leche

Instructions

  1. Cream butter until light and fluffy (1-2 minutes).
  2. Add both sugars and cream; mix for an additional 1-2 minutes, or until combined.
  3. Add the egg and vanilla until combined; scrape down the sides of the bowl.
  4. Combine flour, cornstarch, baking soda, and salt in a large bowl.
  5. Add the dry ingredients in two additions.
  6. Fold in chocolate chips and chocolate chunks by hand.
  7. Refrigerate dough for at least one hour or overnight.
  8. Preheat oven to 350°F (177°C).
  9. Remove cookie dough from the refrigerator.
  10. Scoop 1 heaping tablespoon of cookie dough and flatten into a thin bowl shape.
  11. Add ½ teaspoon of dulce de leche to the center of the dough.
  12. Wrap dough around dulce de leche, ensuring it’s fully enclosed.
  13. Place on a baking sheet lined with a silicone baking mat or parchment paper.
  14. Bake for 10-11 minutes, or until golden brown.
  15. Allow cookies to cool for 5 minutes on the baking sheet, then transfer to a wire rack to cool completely.

Notes

  • For richer flavor, use dark brown sugar instead of light brown sugar.
  • If your dulce de leche is very thick, gently warm it for easier handling.
  • Store baked cookies in an airtight container at room temperature for up to 3 days; freeze for longer storage.
