Description

A refreshingly simple dessert featuring a medley of fresh berries, drizzled with honey, and topped with a creamy vanilla yogurt and almond crunch.


Ingredients

  • 2 packs of seasonal berries, such as blueberries or raspberries
  • 2 tablespoons of good honey
  • 1 tablespoon of chopped almonds
  • 1 cup (250 ml) of double cream
  • 2 cups (500 ml) of natural yogurt
  • 1 teaspoon of vanilla extract
  • Fresh mint leaves, for garnish

Instructions

  1. Rinse the berries thoroughly under cold water and let them drain well.
  2. In a large bowl, gently mix the berries together and then transfer them to a serving plate.
  3. Drizzle the honey evenly over the berries.
  4. Sprinkle the chopped almonds on top of the berries.
  5. In a separate bowl, whip the double cream until soft peaks form.
  6. Fold the natural yogurt and vanilla extract into the whipped cream gently until well combined.
  7. Spoon the vanilla yogurt mixture over the berry salad.
  8. Garnish with fresh mint leaves before serving.

Notes

Use any combination of your favorite seasonal berries for the best flavor. This dish is best served immediately to maintain the freshness of the berries. If you prefer a sweeter yogurt, add a bit more honey to the yogurt mixture. Store any leftovers in the refrigerator for up to one day, though the berries may release more juice over time.
