Description

Healthy and flavorful nori wraps brimming with fresh veggies and a zesty miso-tahini sauce. A perfect light lunch or snack!


Ingredients

Scale
  • 4 nori seaweed sheets
  • 1/4 small head red cabbage
  • 1 large carrot
  • 1 small yellow summer squash
  • 1 small cucumber
  • 1 large ripe avocado
  • 2 tablespoons (30 ml) freshly squeezed lemon juice
  • 1 1/4 tablespoons chickpea miso paste
  • 1 tablespoon (15 ml) raw tahini
  • 2 medjool dates
  • 1 garlic clove
  • 1/4 teaspoon crushed red pepper flakes
  • Water

Instructions

  1. Combine all tahini ingredients except water in a blender.
  2. Blend, adding water 1 teaspoon at a time, until a thin sauce forms.
  3. Place nori sheets on a flat surface.
  4. Add cabbage, carrot, squash, cucumber, and avocado to each sheet.
  5. Top vegetables with a heaping tablespoon of Spicy Tahini Drizzle.
  6. Roll nori sheets into tubes.
  7. Serve with remaining sauce.

Notes

  • For easier rolling, slightly dampen the nori sheets with a damp paper towel before adding fillings.
  • If your sauce is too thick, add more water, 1 teaspoon at a time, until desired consistency is reached.
  • These wraps are best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 1 day.
