- 1/4 cups (59 ml) pure maple syrup
- 1 1/2 tbsp fresh lemon juice
- 1 tbsp arrowroot powder
- 2 tsp ground cinnamon
- Pinch sea salt
- 6 large chopped apples
- 1/2 cups (118 ml) almond flour
- 1 1/2 tsp coconut flour
- 1 cups (237 ml) chopped raw walnut halves
- 1 cups (237 ml) KIND Healthy Grains Clusters, or other granola
- 2 tbsp coconut oil, plus more for greasing dish.
- 3 tbsp pure maple syrup
- Fresh lemon zest
- 1/2 tbsp coconut flakes
Instructions
- Preheat oven to 350°F (177°C).
- Prepare an 8×8 inch baking dish with coconut oil; set aside.
- In a large bowl, mix maple syrup, lemon juice, arrowroot powder, cinnamon, and sea salt.
- Place apples in the prepared baking dish and toss with maple syrup to coat.
- Add almond flour, coconut flour, walnuts, granola clusters, coconut oil, maple syrup, and sea salt; toss with apples.
- Bake for 45 minutes, or until golden brown and bubbling.
- Remove from oven and let cool for 20 minutes before serving.
- Garnish with fresh lemon zest and coconut flakes.
Notes
- For a crispier topping, toast the walnuts and granola clusters before adding them to the apple mixture.
- To make this recipe vegan, ensure your maple syrup is vegan-friendly.
