Description

A delicious gluten-free twist on a classic dessert, perfect for Thanksgiving or a cozy autumn evening. Enjoy warm or cold!


Ingredients

  • 1/4 cups (59 ml) pure maple syrup
  • 1 1/2 tbsp fresh lemon juice
  • 1 tbsp arrowroot powder
  • 2 tsp ground cinnamon
  • Pinch sea salt
  • 6 large chopped apples
  • 1/2 cups (118 ml) almond flour
  • 1 1/2 tsp coconut flour
  • 1 cups (237 ml) chopped raw walnut halves
  • 1 cups (237 ml) KIND Healthy Grains Clusters, or other granola
  • 2 tbsp coconut oil, plus more for greasing dish.
  • 3 tbsp pure maple syrup
  • Fresh lemon zest
  • 1/2 tbsp coconut flakes

Instructions

  1. Preheat oven to 350°F (177°C).
  2. Prepare an 8×8 inch baking dish with coconut oil; set aside.
  3. In a large bowl, mix maple syrup, lemon juice, arrowroot powder, cinnamon, and sea salt.
  4. Place apples in the prepared baking dish and toss with maple syrup to coat.
  5. Add almond flour, coconut flour, walnuts, granola clusters, coconut oil, maple syrup, and sea salt; toss with apples.
  6. Bake for 45 minutes, or until golden brown and bubbling.
  7. Remove from oven and let cool for 20 minutes before serving.
  8. Garnish with fresh lemon zest and coconut flakes.

Notes

  • For a crispier topping, toast the walnuts and granola clusters before adding them to the apple mixture.
  • To make this recipe vegan, ensure your maple syrup is vegan-friendly.
