- 2 sweet potatoes, cleaned and cut into wedges
- 1 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp cumin
- Salt and pepper, to taste
- 2 limes, juiced
- 1/2 cup (120 ml) Greek yogurt, additional as needed
- 1/4 cup (60 ml) fresh cilantro, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the sweet potato wedges with olive oil, garlic powder, cumin, salt, and pepper. Toss until the wedges are evenly coated.
- Transfer the seasoned sweet potato wedges to a well-oiled baking sheet, arranging them in a single layer.
- Bake in the preheated oven for 20 minutes. Flip the wedges and continue baking for another 15-20 minutes, or until they are crispy and golden brown.
- While the sweet potatoes are baking, prepare the cilantro lime dip. In a small bowl, mix the lime juice, Greek yogurt, and chopped cilantro. Adjust the consistency with additional yogurt if needed.
- Serve the baked sweet potato fries hot, with the cilantro lime dip on the side.
Notes
- The cilantro lime dip is versatile and can be used as a salad dressing or a topping for other dishes.
- Store any leftover dip in an airtight container in the refrigerator for up to a week.
- For extra crispiness, ensure the sweet potato wedges are not overcrowded on the baking sheet.
