Description

This cream of tomato soup is a thick, flavorful blend of tomatoes, cream, and spices, perfect for a comforting meal with bread sticks.


Ingredients

  • 5 tomatoes, chopped into pieces
  • 1 onion, chopped
  • 3 tbsp butter
  • 2 tbsp pepper
  • 2 tbsp chopped garlic
  • 2 cups water
  • 5 tbsp cream
  • Salt, to taste
  • Cream and mint leaves, for garnishing

Instructions

  1. Melt the butter in a large pan over medium heat.
  2. Add the chopped onion and garlic, and sauté for about 5 minutes, until the onions are soft and translucent.
  3. Add the chopped tomatoes to the pan and sprinkle with salt and pepper.
  4. Pour in the water and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
  5. Remove the pan from heat and let it cool slightly. Then, blend the mixture until smooth using an immersion blender or in batches in a countertop blender.
  6. Return the soup to the pan, stir in the cream, and heat gently over low heat until warmed through.
  7. Serve hot, garnished with a swirl of cream and mint leaves.

Notes

Serve with bread sticks for a complete meal. Adjust the amount of pepper to your taste preference. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove before serving.
