Description

Crispy cornmeal waffles with a spicy chipotle butter and sweet orange syrup create a flavorful and hearty brunch dish.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 chipotle in adobo sauce
  • 1 teaspoon adobo sauce
  • 1 teaspoon lime juice
  • 1/4 teaspoon lime zest
  • Pinch of salt
  • 1 1/2 cups flour
  • 1/2 cup blue cornmeal
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 1/4 cup maple syrup
  • 1 tablespoon orange zest

Instructions

  1. For the chipotle butter: In a food processor, combine the softened butter, chipotle, adobo sauce, lime juice, lime zest, and a pinch of salt. Blend until smooth. Transfer to a ramekin or small bowl, and refrigerate until ready to use.
  2. For the waffles: Preheat your waffle iron according to the manufacturer’s instructions.
  3. In a large bowl, whisk together the flour, blue cornmeal, sugar, baking powder, and salt.
  4. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  6. Lightly grease the waffle iron with oil or non-stick spray. Pour the batter onto the preheated waffle iron and cook until the waffles are crispy and golden brown, about 5-7 minutes.
  7. For the orange syrup: In a small saucepan over medium heat, combine the orange juice, maple syrup, and orange zest. Bring to a simmer and cook for about 5 minutes, or until slightly thickened.
  8. Serve the waffles warm, topped with a dollop of chipotle butter and a drizzle of orange syrup.

Notes

For a more vibrant color, experiment with the flour-to-cornmeal ratio. The chipotle butter can be made ahead and stored in the refrigerator. Regular maple syrup can be used as a substitute for the orange syrup if desired.
