- 1/2 cup unsalted butter, softened
- 1 chipotle in adobo sauce
- 1 teaspoon adobo sauce
- 1 teaspoon lime juice
- 1/4 teaspoon lime zest
- Pinch of salt
- 1 1/2 cups flour
- 1/2 cup blue cornmeal
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 3/4 cups milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup orange juice
- 1/4 cup maple syrup
- 1 tablespoon orange zest
Instructions
- For the chipotle butter: In a food processor, combine the softened butter, chipotle, adobo sauce, lime juice, lime zest, and a pinch of salt. Blend until smooth. Transfer to a ramekin or small bowl, and refrigerate until ready to use.
- For the waffles: Preheat your waffle iron according to the manufacturer’s instructions.
- In a large bowl, whisk together the flour, blue cornmeal, sugar, baking powder, and salt.
- In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
- Lightly grease the waffle iron with oil or non-stick spray. Pour the batter onto the preheated waffle iron and cook until the waffles are crispy and golden brown, about 5-7 minutes.
- For the orange syrup: In a small saucepan over medium heat, combine the orange juice, maple syrup, and orange zest. Bring to a simmer and cook for about 5 minutes, or until slightly thickened.
- Serve the waffles warm, topped with a dollop of chipotle butter and a drizzle of orange syrup.
Notes
For a more vibrant color, experiment with the flour-to-cornmeal ratio. The chipotle butter can be made ahead and stored in the refrigerator. Regular maple syrup can be used as a substitute for the orange syrup if desired.
