Description
This potato soup is infused with Thé du Tigre, a fragrant smoked tea from Taiwan, adding a subtle, elegant flavor to the dish.

- 2 tablespoons olive oil
- 1 onion, cut into large pieces
- 4 potatoes, peeled and chopped
- 4 slices of uncured bacon
- 1/2 cup of cream
- 3 teaspoons Thé du Tigre tea leaves
- Water, enough to cover the potatoes
- Salt and pepper to taste
Instructions
- Heat the olive oil in a medium-sized pot over medium heat.
- Add the onion and cook until browned, about 5-7 minutes.
- Add the chopped potatoes to the pot and stir to combine.
- Sprinkle the Thé du Tigre tea leaves over the potatoes and onions.
- Add enough water to the pot to just cover the potatoes.
- Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- In a separate pan, cook the bacon until crispy. Remove and crumble.
- Once the potatoes are tender, remove from heat and stir in the cream.
- Season with salt and pepper to taste.
- Serve hot, garnished with crumbled bacon.
Notes
Serve the soup with a dark amber tea like Grand Yunnan Imperial for a complementary pairing. The tea adds a subtle smoky flavor, reminiscent of bacon. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water if needed.
