Description

This potato soup is infused with Thé du Tigre, a fragrant smoked tea from Taiwan, adding a subtle, elegant flavor to the dish.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, cut into large pieces
  • 4 potatoes, peeled and chopped
  • 4 slices of uncured bacon
  • 1/2 cup of cream
  • 3 teaspoons Thé du Tigre tea leaves
  • Water, enough to cover the potatoes
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a medium-sized pot over medium heat.
  2. Add the onion and cook until browned, about 5-7 minutes.
  3. Add the chopped potatoes to the pot and stir to combine.
  4. Sprinkle the Thé du Tigre tea leaves over the potatoes and onions.
  5. Add enough water to the pot to just cover the potatoes.
  6. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  7. In a separate pan, cook the bacon until crispy. Remove and crumble.
  8. Once the potatoes are tender, remove from heat and stir in the cream.
  9. Season with salt and pepper to taste.
  10. Serve hot, garnished with crumbled bacon.

Notes

Serve the soup with a dark amber tea like Grand Yunnan Imperial for a complementary pairing. The tea adds a subtle smoky flavor, reminiscent of bacon. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of water if needed.
