Units
Scale
- 4 oz (115 g) goat cheese, softened
- 3 oz (90 g) light cream cheese, softened
- 1/2 cup (120 ml) finely chopped toasted pecans
- 2 tbsp (30 ml) chopped fresh parsley
- 1 loaf light white sandwich bread
- red pepper jelly (original recipe called for 1/3 cup / 80 ml, I didn't measure but had about half of an 11 oz. jar that I finished off)
Instructions
- In a medium bowl, stir together the softened goat cheese and cream cheese until smooth and well combined.
- Fold in the finely chopped toasted pecans and chopped fresh parsley until evenly distributed throughout the cheese mixture.
- To assemble the sandwiches, spread a generous amount of the cheese mixture on one slice of bread.
- Spread a layer of red pepper jelly on another slice of bread.
- Place the two slices together, cheese side and jelly side facing each other.
- Using a sharp knife, cut off the crusts if desired, and then slice the sandwich into triangles.
- Repeat the process with the remaining bread and fillings.
- For best results, make the sandwiches up to 24 hours in advance and refrigerate them. Slice just before serving.
Notes
- Make the sandwiches up to 24 hours ahead and refrigerate them to save time on the day of serving.
- Slice just before serving to keep the bread fresh.
- Crusts can be removed for a more traditional finger sandwich presentation.
