Description
These sophisticated finger sandwiches combine creamy goat cheese, crunchy pecans, and sweet-spicy red pepper jelly for a delightful snack or appetizer.
Ingredients
Scale
- 4 oz. goat cheese, softened
- 3 oz. light cream cheese, softened
- 1/2 cup finely chopped toasted pecans
- 2 tbsp chopped fresh parsley
- 1 loaf light white sandwich bread
- red pepper jelly (original recipe called for 1/3 cup, I didn’t measure but had about half of an 11 oz. jar that I finished off)
Instructions
- In a medium bowl, stir together the softened goat cheese and cream cheese until smooth and well combined.
- Fold in the finely chopped toasted pecans and chopped fresh parsley until evenly distributed throughout the cheese mixture.
- To assemble the sandwiches, spread a generous amount of the cheese mixture on one slice of bread.
- Spread a layer of red pepper jelly on another slice of bread.
- Place the two slices together, cheese side and jelly side facing each other.
- Using a sharp knife, cut off the crusts if desired, and then slice the sandwich into triangles.
- Repeat the process with the remaining bread and fillings.
- For best results, make the sandwiches up to 24 hours in advance and refrigerate them. Slice just before serving.
Notes
Make the sandwiches up to 24 hours ahead and refrigerate them to save time on the day of serving. Slice just before serving to keep the bread fresh. Crusts can be removed for a more traditional finger sandwich presentation.
