Description

Confit garlic is a richer version of roasted garlic, slow-cooked in olive oil to create a sweet, rich flavor. Perfect for adding depth to pasta sauces and dips.


Ingredients

Scale
  • 1 head of garlic, separated and peeled
  • A few sprigs of thyme
  • A few peppercorns
  • A pinch of chili flakes
  • Olive oil, enough to cover the garlic

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Place the peeled garlic cloves in an oven-proof ramekin.
  3. Add a few sprigs of thyme, a few peppercorns, and a pinch of chili flakes to the ramekin.
  4. Pour enough olive oil over the garlic to completely cover the cloves.
  5. Wrap the ramekin tightly with tinfoil to seal.
  6. Place the ramekin in the preheated oven and roast for about 45 minutes, or until the garlic is soft and golden.
  7. Remove from the oven and let cool. Store the garlic cloves and oil in a sealed container in the refrigerator.

Notes

Confit garlic can be stored in the refrigerator for up to two weeks. Use it in place of raw garlic in recipes for a sweeter, milder flavor. It’s great in pasta sauces, dips, or spread on bread. Ensure the garlic is always submerged in oil to prevent spoilage.
