Description
Confit garlic is a richer version of roasted garlic, slow-cooked in olive oil to create a sweet, rich flavor. Perfect for adding depth to pasta sauces and dips.

- 1 head of garlic, separated and peeled
- A few sprigs of thyme
- A few peppercorns
- A pinch of chili flakes
- Olive oil, enough to cover the garlic
Instructions
- Preheat your oven to 160°C (320°F).
- Place the peeled garlic cloves in an oven-proof ramekin.
- Add a few sprigs of thyme, a few peppercorns, and a pinch of chili flakes to the ramekin.
- Pour enough olive oil over the garlic to completely cover the cloves.
- Wrap the ramekin tightly with tinfoil to seal.
- Place the ramekin in the preheated oven and roast for about 45 minutes, or until the garlic is soft and golden.
- Remove from the oven and let cool. Store the garlic cloves and oil in a sealed container in the refrigerator.
Notes
Confit garlic can be stored in the refrigerator for up to two weeks. Use it in place of raw garlic in recipes for a sweeter, milder flavor. It’s great in pasta sauces, dips, or spread on bread. Ensure the garlic is always submerged in oil to prevent spoilage.
