Description

These lemongrass bars feature a golden, buttery coconut shortbread crust with a tangy, lemony filling that offers a subtle kick of lemongrass.


Ingredients

Units
  • 1 1/2 cups (170 g) all-purpose flour
  • 1 cup (75 g) unsweetened shredded coconut
  • 1/2 cup (60 g) powdered sugar
  • 1/2 tsp salt
  • 1/2 cup (115 g) plus 3 tbsp (45 ml) unsalted butter, at room temperature
  • 1 1/4 cups (280 g) granulated sugar
  • 1/4 cup (31 g) all-purpose flour
  • 3 large eggs
  • 5 tbsp (75 ml) fresh lemon juice
  • 3 lemongrass stalks, bottom 4 inches only, finely chopped
  • 1/4 cup (30 g) powdered sugar, for sprinkling on top

Instructions

  1. Preheat your oven to 350°F (176°C). Butter a 13x9x2 inch baking pan.
  2. For the crust: In a large bowl, using an electric mixer, beat together 1 1/2 cups flour, coconut, powdered sugar, and salt until well blended. Add the butter and beat on low speed until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the prepared baking pan. Bake for 20-25 minutes, or until the crust is golden brown. Remove from the oven and let it cool slightly.
  4. For the filling: In a food processor, pulse the granulated sugar and lemongrass together until the lemongrass is finely ground, about 1 minute. Add the lemon juice and process until well blended. Add the eggs and process to blend. Add the flour and a pinch of salt, and pulse until smooth.
  5. Pour the filling over the warm crust. Return the pan to the oven and bake for an additional 25 minutes, or until the filling is set and the top is lightly golden.
  6. Allow the bars to cool completely in the pan on a wire rack. Once cooled, cut into squares, sprinkle with powdered sugar, and serve.

Notes

  • These bars are best served chilled.
  • Store them in an airtight container in the refrigerator for up to 5 days.
  • For a more pronounced lemongrass flavor, consider steeping the lemongrass in the lemon juice for a few minutes before mixing.
  • If you prefer a less sweet dessert, reduce the sugar in the filling by 1/4 cup.
