Description

  • 1/2 teaspoon salt
  • 1/2 cup walnuts, chopped
  • 1 cup coconut milk
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 eggs

Instructions

  1. Preheat the oven to 400°F (200°C). Oil and flour a 9×9 inch cake pan or two loaf pans to prevent sticking.
  2. In a large bowl, combine all dry ingredients: flour, crushed Weetabix, baking powder, cinnamon, salt, and walnuts. Mix well to ensure even distribution of ingredients.
  3. In a separate smaller bowl, mix together the wet ingredients: coconut milk, brown sugar, vegetable oil, vanilla extract, and eggs. Stir until the sugar is dissolved and the mixture is smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can make the cake dense.
  5. Drain the pears and gently fold them into the batter.
  6. Pour the batter into the prepared cake pan(s) and spread evenly.
  7. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes
