- 2 cups coconut water
- 1/2 cup fresh coconut meat, diced into small pieces
- 1/2 cup fresh or frozen mixed berries
Instructions
- Fill each of your popsicle molds about three-quarters of the way up with coconut water.
- Add a few pieces of coconut meat and a few berries to each mold, ensuring they are evenly distributed.
- Place the molds in the freezer for about 10 minutes to slightly set the coconut water.
- Insert popsicle sticks into each mold, ensuring they stand upright.
- Return the molds to the freezer and freeze for at least 4 hours or until completely solid.
- To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.
Notes
You can substitute coconut milk for a creamier texture. Use any combination of fruits, herbs, or edible flowers to customize your popsicles. Store popsicles in an airtight container in the freezer for up to 2 weeks.
