Description

These refreshing coconut and fruit popsicles are a delightful treat, featuring coconut water, coconut meat, and mixed berries frozen into a deliciously icy snack.


Ingredients

  • 2 cups coconut water
  • 1/2 cup fresh coconut meat, diced into small pieces
  • 1/2 cup fresh or frozen mixed berries

Instructions

  1. Fill each of your popsicle molds about three-quarters of the way up with coconut water.
  2. Add a few pieces of coconut meat and a few berries to each mold, ensuring they are evenly distributed.
  3. Place the molds in the freezer for about 10 minutes to slightly set the coconut water.
  4. Insert popsicle sticks into each mold, ensuring they stand upright.
  5. Return the molds to the freezer and freeze for at least 4 hours or until completely solid.
  6. To release the popsicles, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Notes

You can substitute coconut milk for a creamier texture. Use any combination of fruits, herbs, or edible flowers to customize your popsicles. Store popsicles in an airtight container in the freezer for up to 2 weeks.
