Coconut Almond Granola

Description

This is really a basic granola recipe. Nothing too fancy. Nothing too “scary” for the kids. Just 3 main ingredients and some flavor.


Ingredients

  • 5 cups (1.2 L) rolled oats
  • 1 package sliced almonds (about 8 oz / 225 g)
  • 1 cup (240 ml) coconut flakes
  • 1 tbsp (15 ml) cinnamon
  • 1/4 tsp salt
  • 1/2 cup (120 ml) honey
  • 1/4 cup (60 ml) canola oil
  • 2 tbsp (30 ml) vanilla
  • Add cranberries after cooking, if desired...

Instructions

  1. In a small bowl (or large liquid measuring cup) combine honey, oil and vanilla. Set aside.
  2. In a large mixing bowl combine oats, almonds, coconut, cinnamon and salt. Stir to combine.
  3. Pour honey mixture over oats and stir until well combined and the honey is evenly distributed.
  4. Pour onto 2 lined baking sheets.
  5. Bake at 250 degrees for 1 hour and 15 minutes… stirring the granola every 15 minutes or so to evenly toast the mixture.
  6. When finished, immediately transfer to a bowl to cool (the granola will stick to your baking sheet if left to cool on the baking sheet.)
  7. Enjoy!

Notes

  • Feel free to add dried cranberries or other dried fruit to the granola AFTER it has been cooked.
