Citrus and Mojo-Spiced Pork

Ingredients

  • 1.5 pound Farm Promise boneless pork loin (well trimmed)
  • ½ cup orange juice
  • ¼ cup lime juice
  • ½ cup pineapple juice
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons fresh oregano
  • 5 cloves garlic (minced)
  • ½ teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons cumin

Instructions

  1. In a small bowl, combine the salt, pepper, and cumin, then rub all over the pork.
  2. Combine the orange juice, lime juice, pineapple juice, ¼ cup olive oil, honey, garlic, and oregano in a large ziplock bag, then add the pork. Seal and marinate in the refrigerator for 4 hours (or up to overnight), turning several times.
  3. Preheat the oven to 375*F. Heat a large frying pan over medium-high heat. Add the pork and sear it on all sides, including the ends.
  4. Transfer the pork to a shallow roasting pan OR to a wire rack placed over a baking tray and cover with foil. Bake for 35-40 minutes (about 15-30 minutes per pound) or until the internal temperature in the middle reaches 145*F.
  5. While the pork is in the oven, bring the marinade to a rolling boil in a small saucepan for 3-4 minutes, then set aside.
  6. Remove pork from oven and let rest at least 5 minutes. Slice into rounds about ½” thick, then pour reserved marinade over the top before serving.

Notes

I used 100% orange juice, 100% pineapple juice, and freshly squeezed lime juice for this recipe and recommend the same, if possible.

This recipe calls for fresh oregano, but dried oregano may be substituted if you prefer.

Be sure to allow the pork to rest for at least 5 minutes before slicing.
