Cilantro Rice with Pistachios

Description

This makes a great side to any Mexican meal, or you can mix in a protein of your choice for a one-dish dinner.


Ingredients

Units Scale
  • 1 cup (240 ml) brown rice
  • 1/2 onion
  • 2 garlic cloves
  • 1 cup (240 ml) packed cilantro
  • 2-3 tbsp (30-45 ml) olive oil
  • juice of half a lime
  • 1 jalepeno pepper
  • handful of pistachios

Instructions

  1. Chop onions, garlic and jalpeno. Cook over medium heat with olive oil until soft.
  2. Cook rice.
  3. In a food processor, combine the cilantro, onion mixture, lime juice and a splash more olive oil. Mix until finely chopped.
  4. Stir cilantro mixture into rice and season to taste with salt and more lime juice.
  5. Top with chopped pistachios.
