- 75 g (3 oz) high quality butter
- 125 g (4½ oz) light brown sugar
- 1 large organic free range egg
- 150 g (5 0z) corn flour-cornmeal
- sea salt to taste
- 75 g (3 oz) blanched and toasted almonds
- 100 g (3½) gluten-free chocolate drops or flakes
Instructions
- Preheat oven to 180°C (350°F/gas 4) .
- Knead the butter and sugar. Add the egg and mix until dough is smooth.
- Add the flour, a pinch of salt, almonds and stir to mix the ingredients together.
- Add the chocolate drops and work the dough until firm.
- Using a spoon, pour the mixture on a baking sheet, lined with parchment paper.
- Bake at 180°C (350°F/gas 4) for 10-15 minutes.
