Description

Indulge in these delightful Chocolate Cake Whoopie Pies, a perfect blend of cake and cookie, sandwiched with creamy buttercream frosting.


Ingredients

  • 1 box of Pillsbury™ Purely Simple® Chocolate Cake & Cupcake Mix
  • 3 eggs
  • 1/2 cup of water
  • 1/2 cup of vegetable oil
  • 1 package Pillsbury™ Purely Simple® Buttercream Frosting Mix (plus the ingredients on the package)
  • Optional: food coloring for frosting
  • Optional: sprinkles for decoration

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line your baking sheets with silicone mats or parchment paper.
  2. In a large bowl, combine the chocolate cake mix, eggs, water, and vegetable oil. Beat the mixture for three minutes until smooth and well combined.
  3. Using a small cookie scoop, drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
  4. Optionally, sprinkle decorations on top of the batter before baking if desired.
  5. Bake in the preheated oven for 8-10 minutes, or until the edges are firm and the tops spring back when lightly touched.
  6. Remove from the oven and let the cakes cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  7. Prepare the buttercream frosting mix according to the package instructions. If desired, add food coloring to the frosting to match a theme or occasion.
  8. Once the cakes are completely cool, spread a generous amount of frosting on the flat side of one cake and sandwich it with another cake, flat side down.
  9. Repeat with the remaining cakes and frosting.

Notes

You can customize the frosting with food coloring to match any theme or occasion. Add sprinkles before baking for extra decoration. Try using different cake mixes for variety, such as red velvet or funfetti. Store in an airtight container for up to 3 days.
