Scale
- 175 grams unsalted butter
- 150 grams good quality chocolate, cut into pieces (e.g., Cadbury Fruit & Nut)
- 250 grams digestive biscuits or graham crackers (e.g., Britannia's Nutrichoice)
- Assorted nuts, roughly chopped
Instructions
- In a small pan, gently heat the butter and chocolate together until both are melted and well combined. Stir occasionally to ensure a smooth mixture. Set aside to cool slightly.
- While the chocolate mixture is cooling, crush the digestive biscuits or graham crackers into fine crumbs. You can do this by placing them in a sealed plastic bag and using a rolling pin, or by pulsing them in a food processor.
- Combine the crushed biscuits and roughly chopped nuts in a large bowl.
- Pour the cooled chocolate mixture over the biscuit and nut mixture. Stir well until all the dry ingredients are thoroughly coated with the chocolate mixture.
- Line a square or rectangular dish with parchment paper. Transfer the mixture into the dish, pressing it down firmly and evenly with the back of a spoon or spatula.
- Refrigerate for at least 2 hours, or until set and firm.
- Once set, remove from the refrigerator and cut into bite-sized pieces. Serve chilled.
Notes
- You can enjoy the cake as is or crumble it and serve with chocolate sauce.
- Roughly chopping the nuts adds an earthy, rustic texture.
- Store leftovers in an airtight container in the refrigerator for up to a week.
