A twist on a classic chocolate chip cookie, these cookies feature fresh cherries and almond meal for a delightful crunch.

- 2 eggs
- 1 1/2 cups (355 ml) all purpose flour
- 1/2 cup (118 ml) almond meal
- 1/4 cup (60 ml) unsweetened cocoa
- 1/2 cup (118 ml) semi sweet chocolate chips
- 1/2 cup (118 ml) butter
- 1 cup (237 ml) brown sugar
- 1/2 cup (118 ml) chopped fresh cherries
Instructions
- Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper or non-stick spray.
- In a bowl, mix together all-purpose flour, baking soda, and baking powder.
- Whisk together sugar and butter until pale and creamy.
- Add eggs and continue whisking.
- Add melted chocolate and cocoa and whisk until well combined.
- Mix in flour and almond meal to form a smooth batter.
- Add cherries and mix.
- Using a small ice cream scoop or two spoons, form dough balls and place them a few inches apart on the baking sheet. Bake for 11 to 13 minutes.
- Cool completely before serving.
Notes
- For intense cherry flavor, use more cherries or add a teaspoon of cherry extract.
- To prevent the cookies from spreading too thin, chill the dough for at least 30 minutes before baking.
- Substitute pecans or walnuts for added texture if you don’t have almonds.
