Description

A twist on a classic chocolate chip cookie, these cookies feature fresh cherries and almond meal for a delightful crunch.


Ingredients

  • 2 eggs
  • 1 1/2 cups (355 ml) all purpose flour
  • 1/2 cup (118 ml) almond meal
  • 1/4 cup (60 ml) unsweetened cocoa
  • 1/2 cup (118 ml) semi sweet chocolate chips
  • 1/2 cup (118 ml) butter
  • 1 cup (237 ml) brown sugar
  • 1/2 cup (118 ml) chopped fresh cherries

Instructions

  1. Preheat oven to 350°F (177°C) and line a baking sheet with parchment paper or non-stick spray.
  2. In a bowl, mix together all-purpose flour, baking soda, and baking powder.
  3. Whisk together sugar and butter until pale and creamy.
  4. Add eggs and continue whisking.
  5. Add melted chocolate and cocoa and whisk until well combined.
  6. Mix in flour and almond meal to form a smooth batter.
  7. Add cherries and mix.
  8. Using a small ice cream scoop or two spoons, form dough balls and place them a few inches apart on the baking sheet. Bake for 11 to 13 minutes.
  9. Cool completely before serving.

Notes

  • For intense cherry flavor, use more cherries or add a teaspoon of cherry extract.
  • To prevent the cookies from spreading too thin, chill the dough for at least 30 minutes before baking.
  • Substitute pecans or walnuts for added texture if you don’t have almonds.
