Description
Chef Omar Sybblis rich oxtail stew is a taste of Jamaica. Slow-cooked to perfection, its comfort food at its finest.

- 9 lbs (4 kg) oxtail
- 2 cups (473 ml) Marinade
- 1/2 cups (118 ml) soya sauce
- 1 liters (34 fl oz) beef stock
- 1 1/2 cups (355 ml) chopped onions
- 2 tbsp minced garlic
- 1 sprig Thyme
- Salt
- Black pepper
- 2 cups (473 ml) cooked Broad Beans (Lima Beans)
- 1 medium onion (finely chopped)
- 1/2 cups (118 ml) scallions (finely chopped)
- 1 hot pepper (finely chopped)
- 3 tbsp soy sauce
- 1 tbsp oil
- 1 tbsp cider or white vinegar
- 2 tsp fresh thyme leaves
- 1 tsp salt (kosher or sea salt is preferable)
- 1 tsp Pimento (Allspice, ground)
Instructions
- Place oxtail in a non-reactive bowl, season with salt and pepper to taste. Pour marinade and soy sauce generously over the oxtail, then set aside to marinate for 12 hours or overnight.
- Place marinated oxtail on a sheet pan and roast in a 350°F (177°C) oven until tender and the desired color is achieved (at least 30 minutes).
- Pour off excess fat from the roasted oxtail; remove from roasting pan and set aside.
- In a large braising pot or Dutch oven, sauté onions and garlic until golden brown.
- Add the reserved roasted oxtail to the pot.
- Remove thyme leaves from the stem and crumble them into the pot.
- Cover and cook very slowly over medium heat until tender (about 1 1/2 hours).
- Add cooked broad beans and simmer, adding beef stock as needed to maintain moisture and ensure tenderness.
Notes
- For deeper flavor, sear the oxtail before marinating and roasting.
- If oxtail is unavailable, substitute beef shanks or beef stew meat, adjusting cooking time as needed.
- Leftover stew freezes well; store in airtight containers for up to 3 months.
