Description

Chef Omar Sybblis rich oxtail stew is a taste of Jamaica. Slow-cooked to perfection, its comfort food at its finest.


Ingredients

  • 9 lbs (4 kg) oxtail
  • 2 cups (473 ml) Marinade
  • 1/2 cups (118 ml) soya sauce
  • 1 liters (34 fl oz) beef stock
  • 1 1/2 cups (355 ml) chopped onions
  • 2 tbsp minced garlic
  • 1 sprig Thyme
  • Salt
  • Black pepper
  • 2 cups (473 ml) cooked Broad Beans (Lima Beans)
  • 1 medium onion (finely chopped)
  • 1/2 cups (118 ml) scallions (finely chopped)
  • 1 hot pepper (finely chopped)
  • 3 tbsp soy sauce
  • 1 tbsp oil
  • 1 tbsp cider or white vinegar
  • 2 tsp fresh thyme leaves
  • 1 tsp salt (kosher or sea salt is preferable)
  • 1 tsp Pimento (Allspice, ground)

Instructions

  1. Place oxtail in a non-reactive bowl, season with salt and pepper to taste. Pour marinade and soy sauce generously over the oxtail, then set aside to marinate for 12 hours or overnight.
  2. Place marinated oxtail on a sheet pan and roast in a 350°F (177°C) oven until tender and the desired color is achieved (at least 30 minutes).
  3. Pour off excess fat from the roasted oxtail; remove from roasting pan and set aside.
  4. In a large braising pot or Dutch oven, sauté onions and garlic until golden brown.
  5. Add the reserved roasted oxtail to the pot.
  6. Remove thyme leaves from the stem and crumble them into the pot.
  7. Cover and cook very slowly over medium heat until tender (about 1 1/2 hours).
  8. Add cooked broad beans and simmer, adding beef stock as needed to maintain moisture and ensure tenderness.

Notes

  • For deeper flavor, sear the oxtail before marinating and roasting.
  • If oxtail is unavailable, substitute beef shanks or beef stew meat, adjusting cooking time as needed.
