- 1 cup powdered sugar
- 1 cup graham cracker crumbs
- 14 oz milk chocolate or semi-sweet baking chocolate (NOT chocolate chips)
Instructions
- In a stand mixer or by hand, cream together the cream cheese and vanilla extract until smooth.
- Add the powdered sugar and graham cracker crumbs to the cream cheese mixture and mix until fully combined.
- Roll about 1 tablespoon of the cheesecake mixture into balls.
- Place the cheesecake balls on a baking sheet and refrigerate for 15-20 minutes to help them hold their shape.
- Melt the baking chocolate in a microwave or double boiler until smooth.
- Dip each chilled cheesecake ball into the melted chocolate, ensuring it is fully coated.
- Place the chocolate-covered truffles back on the baking sheet and allow them to set at room temperature or in the refrigerator until the chocolate is firm.
