Cheese and Chili Chicken Burrito

Ingredients

  • 2 tbsp olive oil
  • 2 tbsp chopped fresh cilantro leaves (or dried)
  • 1 tbsp chili powder
  • 1 tbsp ground cumin
  • 2 tsp salt
  • 1 clove garlic (chopped)
  • 1/2 tsp ground black pepper
  • 1/8 tsp cayenne pepper
  • 11 1/2 lbs chicken breast (diced)
  • 1 bell pepper (sliced)
  • 2 tbsp onion (diced)
  • 1 plum tomato (cored and diced)
  • 11 1/2 cup shredded colby jack or cheddar cheese

Instructions

  1. Preheat oven to 400 degrees F.
  2. Whisk together oil, chopped cilantro, chili powder, cumin, salt, garlic, pepper, and cayenne in a bowl. Add the chicken and toss to coat.
  3. Transfer the chicken to a non-stick (or foil-lined) pan and top with the pepper, onion, and tomato.
  4. Roast until cooked through. Remove from oven and immediately too with cheese.
  5. Serve with Spanish rice, lettuce, sour cream, salsa, cornbread. Or as a burrito! Enjoy!
