Description

These marinated mushrooms add a gourmet touch to any charcuterie board.
The herbs and garlic create a flavor explosion thats perfect for snacking.


Ingredients

  • 2 tbsp + 1/4 cup (60 ml) light olive oil
  • 1 lbs (454 g) cremini or baby bella mushrooms
  • 1/3 cup (79 ml) shallot
  • 2 cloves garlic
  • 1 tbsp (15 ml) white wine vinegar
  • 1 lemon juice
  • 4 sprigs thyme
  • 2 tbsp (30 ml) fresh rosemary leaves
  • 2 bay leaves
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  1. Heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
  2. Add mushrooms and shallots; cook, stirring often, until the shallots soften. Do not brown.
  3. Add garlic, vinegar, lemon juice, thyme, rosemary, bay leaves, salt, pepper, and ¼ cup olive oil.
  4. Stir to mix well and simmer for 5 minutes, or until the liquid from the mushrooms has reduced.
  5. Transfer to a large bowl and allow to cool to room temperature.
  6. Once cooled, transfer to a 20-ounce jar, seal, and refrigerate for at least 4 hours, up to 5 days.

Notes

  • For deeper flavor, marinate the mushrooms overnight.
  • Substitute other mushrooms like shiitake or oyster for a different taste profile.
  • Store marinated mushrooms in the refrigerator for up to 5 days; they will keep longer if kept sealed tightly.
