Description

Sweet potato has such a mild flavor that it’s really providing the moisture and texture in these muffins, while all the spices give them a kick.


Ingredients

Units Scale
  • 1 1/2 cups (360 ml) flour
  • 1 cup (240 ml) brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp black pepper
  • 1 cup (240 ml) pureed sweet potato
  • 1/4 cup (60 ml) black tea
  • 2 eggs
  • 1/3 cup (80 ml) butter, melted

Instructions

  1. Heat over to 350 degrees. Line or oil a muffin tin.
  2. Whisk together flour, sugar, salt and baking soda.
  3. In another bowl, whisk together eggs, sweet potato puree, melted butter, spices and tea.
  4. Add the dry ingredients and wet ingredients together and stir until just combined.
  5. Evenly distribute batter amongst tins.
  6. Bake for 25-30 minutes.
  7. Eat.
