- 1 1/2 cups (360 ml) cornmeal
- 2 cups (480 ml) water
- 1 1/2 cups (360 ml) milk
- 2 3/4 cups (660 ml) chicken broth
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 package (5 oz / 145 g) Saga Blue Brie
- 1 lb (450 g) shrimp, peeled and deveined
- 1 cup (240 ml) buffalo wing sauce (mild or extra mild, to taste)
- 2 tbsp olive oil
- 1 tbsp butter
- Chopped parsley, for garnish
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
- In a medium saucepan, combine chicken broth, water, milk, cornmeal, garlic powder, salt, and pepper. Stir and bring to a boil, then reduce the heat to a simmer.
- Cook the polenta, stirring frequently, for about 20 minutes until thickened and smooth.
- Stir in the Saga Blue Brie until fully melted and incorporated into the polenta.
- Pour the polenta into a greased baking dish and smooth the top. Bake for 25 minutes.
- Remove the polenta from the oven and let it cool to room temperature. Once cooled, cut into large squares.
- In a large skillet, heat olive oil and butter over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque.
- Reduce the heat to low and add the buffalo wing sauce to the shrimp, stirring to coat evenly.
- Warm the polenta squares in the oven if needed, then place them on serving plates.
- Spoon the buffalo shrimp over the polenta squares, ensuring plenty of sauce covers the polenta.
- Garnish with chopped parsley and serve immediately.

- The polenta can be made ahead of time and reheated before serving.
- Adjust the spiciness by choosing a mild or extra mild buffalo wing sauce.
