- 1 cup (240 ml) all-purpose flour
- 8 tbsp (1 stick) (115 g) unsalted butter, at room temperature
- 3 oz (85 g) blue cheese, crumbled
- 1 pint blackberries
- 3 tbsp sugar
- Juice of 1 lemon
- 1 tsp fresh thyme leaves
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a food processor, combine the flour, butter, and blue cheese. Process until the dough comes together and starts to form a ball.
- Transfer the dough onto a lightly floured surface and roll it into a log about 1 1/2 inches in diameter. Wrap in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Once chilled, slice the dough into 1/4-inch thick rounds and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are golden brown. Allow to cool on a wire rack.
- For the blackberry compote, combine the blackberries, sugar, lemon juice, and thyme in a saucepan over medium heat. Cook, stirring occasionally, until the mixture thickens, about 10-15 minutes. Let cool before serving.
- Serve the blue cheese crackers topped with a spoonful of blackberry compote.
