Description
This quick green bean side dish is enriched with nutty brown butter, crunchy pine nuts, sweet cranberries, and tangy Castello Blue Cheese for a gourmet flavor experience.

- 1 lb (450 g) green beans, washed and trimmed
- 1/3 cup (80 ml) pine nuts, roasted
- 2 tsp (10 ml) fresh lemon juice
- 2 tbsp (30 ml) salted butter
- 2 tbsp (30 ml) dried cranberries
- 2 oz (60 g) Blue Cheese, crumbled
- Salt and freshly ground black pepper, to taste
Instructions
- Start by roasting the pine nuts in a pan over medium heat until fragrant and golden, about 4-5 minutes. Set aside.
- Bring a pot of water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and crisp-tender. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
- In a large skillet, melt the butter over medium heat. Continue cooking the butter, stirring constantly, until it turns a golden brown and has a nutty aroma, about 5 minutes.
- Add the cooked green beans to the skillet with the brown butter. Toss to coat the beans evenly.
- Stir in the roasted pine nuts, dried cranberries, and fresh lemon juice. Season with salt and freshly ground black pepper to taste.
- Transfer the beans to a serving dish and sprinkle with crumbled Blue Cheese. Serve immediately.
Notes
- To keep the green beans crisp, immediately transfer them to ice water after boiling.
- This dish is best served immediately to enjoy the full flavor of the melted blue cheese.
- You can substitute walnuts for pine nuts if desired.
