Description

This quick green bean side dish is enriched with nutty brown butter, crunchy pine nuts, sweet cranberries, and tangy Castello Blue Cheese for a gourmet flavor experience.


Ingredients

  • 1 lb green beans, washed and trimmed
  • 1/3 cup pine nuts, roasted
  • 2 teaspoons fresh lemon juice
  • 2 tablespoons salted butter
  • 2 tablespoons dried cranberries
  • 2 oz Blue Cheese, crumbled
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Start by roasting the pine nuts in a pan over medium heat until fragrant and golden, about 4-5 minutes. Set aside.
  2. Bring a pot of water to a boil. Add the green beans and cook for 3-4 minutes until they are bright green and crisp-tender. Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again and set aside.
  3. In a large skillet, melt the butter over medium heat. Continue cooking the butter, stirring constantly, until it turns a golden brown and has a nutty aroma, about 5 minutes.
  4. Add the cooked green beans to the skillet with the brown butter. Toss to coat the beans evenly.
  5. Stir in the roasted pine nuts, dried cranberries, and fresh lemon juice. Season with salt and freshly ground black pepper to taste.
  6. Transfer the beans to a serving dish and sprinkle with crumbled Blue Cheese. Serve immediately.

Notes

To keep the green beans crisp, immediately transfer them to ice water after boiling. This dish is best served immediately to enjoy the full flavor of the melted blue cheese. You can substitute walnuts for pine nuts if desired. Store leftovers in an airtight container in the refrigerator for up to 2 days.
