Description

Experience the fresh taste of Hog Island Oysters prepared two ways: raw with a hint of lime and hot sauce, or grilled to perfection.


Ingredients

Scale
  • 12 fresh oysters, preferably Hog Island
  • Pinch of lime zest
  • Few drops of lime juice
  • 1 dash Tapatio hot sauce
  • Optional: your favorite hot sauce for serving

Instructions

  1. Preheat your grill over medium-low heat with the hood open.
  2. Place the oysters in their shells directly on the heated grill.
  3. Watch for the shells to open slightly, indicating they are done. This should take about 5-7 minutes.
  4. Carefully remove the oysters from the grill using tongs.
  5. For raw preparation, shuck the oysters and serve immediately with a pinch of lime zest, a few drops of lime juice, and a dash of Tapatio hot sauce.
  6. For grilled preparation, serve the oysters directly from the grill with your choice of hot sauce.

Notes

Grilling Oysters: You can also grill them already shucked to watch the oyster cook to avoid overcooking. This method is more challenging as shucking raw oysters requires skill. Raw oysters are best served immediately after shucking for the freshest taste. Experiment with different hot sauces to find your favorite pairing.
