Description

Crispy cabbage and tender eggs make this skillet a hearty and satisfying breakfast. A simple, flavorful way to start your day.


Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1/4 cups (59 ml) finely diced yellow onion
  • 1/2 head green cabbage
  • 4 eggs
  • salt
  • pepper
  • 1 green onion

Instructions

  1. Preheat oven to 350°F (177°C).
  2. In a large oven-proof skillet, heat olive oil over medium heat. Add garlic and onion and cook until onions are translucent, 2-3 minutes.
  3. Add cabbage. Cook, stirring occasionally, until cabbage becomes tender.
  4. Season with salt and pepper to taste.
  5. Make 4 divots in the cabbage mixture.
  6. Crack one egg into each divot.
  7. Place in oven and cook until the whites are set, about 5 minutes.
  8. Remove from oven, sprinkle top with green onion and a little more salt and pepper, if needed.
  9. Serve immediately.
