- 1 tablespoon olive oil
- 2 cloves garlic
- 1/4 cups (59 ml) finely diced yellow onion
- 1/2 head green cabbage
- 4 eggs
- salt
- pepper
- 1 green onion
Instructions
- Preheat oven to 350°F (177°C).
- In a large oven-proof skillet, heat olive oil over medium heat. Add garlic and onion and cook until onions are translucent, 2-3 minutes.
- Add cabbage. Cook, stirring occasionally, until cabbage becomes tender.
- Season with salt and pepper to taste.
- Make 4 divots in the cabbage mixture.
- Crack one egg into each divot.
- Place in oven and cook until the whites are set, about 5 minutes.
- Remove from oven, sprinkle top with green onion and a little more salt and pepper, if needed.
- Serve immediately.
