Description

Ripe plums make this moist cake divine. A perfect way to enjoy the seasons bounty.


Ingredients

Units
  • 1 1/2 sticks (113 g) Unsalted Butter
  • 1 1/2 cups (355 ml) plus 2 tbsp All Purpose Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 cup (118 ml) Packed Light brown sugar
  • 1/2 cup (118 ml) granulated sugar
  • 3 Large eggs
  • 1 tsp Pure Vanilla Extract
  • 1/4 cup (60 ml) Sour Cream
  • 4 halved,pitted and cut into eighths Plums
  • Confectioners sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9-inch cake pan or baking pan lined with parchment paper.
  3. Beat butter and sugars with an electric mixer until light and fluffy.
  4. In a large bowl, mix flour, baking soda, and salt.
  5. With mixer on low, beat in eggs one at a time until incorporated.
  6. Beat in vanilla.
  7. Add in 1/2 of the flour mixture, then sour cream, followed by the rest of the flour mixture. Mix until just combined.
  8. Spread batter into pan and smooth the top with a knife.
  9. Arrange plums on top.
  10. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
  11. Dust with confectioners’ sugar once cooled.

Notes

  • For a richer flavor, use dark brown sugar instead of light brown sugar.
  • To prevent the plums from sinking, gently press them into the batter.
  • Store the cooled cake in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days.
