Ingredients

  • 50 grams butter (browned)
  • 30 grams caster sugar
  • 30 grams brown sugar
  • 80 grams all purpose flour
  • 1/4 th teaspoon baking soda
  • 1 tablespoon milk
  • 45 caramels / butter toffees (frozen)

Instructions

  1. Preheat oven to 180 degrees Celcius.
  2. In a clean mixing bowl, add the brown butter and both sugars and mix well till combined.
  3. Whisk together flour and baking soda to combine well and then add to the butter and sugar mix.
  4. Mix well till it comes together.
  5. Add milk to make the dough pliable.
  6. Knead it briefly only till it comes together.
  7. Measure out 1 tablespoon of dough twice. Flatten both balls evenly and thinly.
  8. Place a caramel / butter toffee on one flattened dough and cover with the other. Roll until a uniform round ball forms.
  9. Repeat with the rest of the dough.
  10. Place the dough well away from each other since they do spread a little.
  11. Bake in the oven for 14 – 15 minutes, turning them halfway through so they’re evenly baked.
  12. Transfer to a cooling rack to cool for at least 20 – 25 minutes before tucking in.
