Description

A refreshing and vibrant winter salad featuring bright citrus, sweet pomegranate seeds, and creamy goat cheese. The simple orange vinaigrette ties all the fresh flavors together perfectly.


Ingredients

  • 7 cups (1.66L) fresh pre-washed mixed greens
  • 3 navel oranges (peeled,divided into sections & halved)
  • 3/4 cup (177ml) pomegranate seeds
  • 1 avocado (cubed)
  • 1/2 cup (118ml) crumbled goat cheese
  • 1/3 cup (79ml) sliced almonds
  • 1/4 cup (59ml) orange juice (or about the juice of 1 orange)
  • 1 teaspoon (5ml) orange zest
  • 2 Tablespoons (30ml) rice wine vinegar
  • 1 Tablespoon (15ml) honey (can add more if you like a sweeter dressing)
  • 1/8 to 1/4 teaspoon (0.6-1.2ml) salt
  • 1/4 cup (59ml) extra light virgin olive oil
  • Pinch of ground pepper

Instructions

  1. Place greens in a large salad bowl. Top with the remaining salad ingredients (oranges, pomegranate seeds, avocado, goat cheese, and almonds).
  2. Prepare dressing by vigorously whisking together all dressing ingredients (orange juice, orange zest, rice wine vinegar, honey, salt, olive oil, ground pepper, and cayenne pepper if using).
  3. Pour dressing over salad, toss gently, and serve immediately.
