Ingredients

  • 1 can of buttermilk biscuits
  • A few slices of hardwood smoked bacon
  • A few slices of fake/soy bacon
  • 2 organic free-range vegetarian fed eggs
  • 2 slices of cheddar cheese (or your favorite cheese)

Instructions

  1. Preheat your oven and bake the buttermilk biscuits according to the package directions. Alternatively, you can make your own biscuits from scratch if you prefer.
  2. While the biscuits are baking, cook the hardwood smoked bacon in a skillet over medium heat until crispy, about 5-7 minutes. Remove and drain on paper towels.
  3. In the same skillet, cook the fake/soy bacon according to the package instructions, usually about 3-5 minutes per side until crispy. Remove and drain on paper towels.
  4. In a separate pan, fry the eggs to your liking. For a classic breakfast sandwich, cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  5. Once the biscuits are done, split them open and place a slice of cheddar cheese on the bottom half of each biscuit.
  6. Layer the bacon (or fake bacon) and a fried egg on top of the cheese.
  7. Top with the other half of the biscuit and serve immediately while warm.
