Description
Soft, melting blue brie cheese is simply served with reduced balsamic and strawberries for a perfect summer crostini.

- 1 loaf of French or sourdough bread, sliced on a diagonal
- 1 cup (240 ml) of strawberries, hulled and sliced
- 1/2 tsp sugar
- 1/2 cup (120 ml) good quality balsamic vinegar
- Saga Blue Brie
Instructions
- Toss the sliced strawberries with the sugar and set aside to macerate for about 10 minutes.
- In a small saucepan, bring the balsamic vinegar to a simmer over medium heat. Cook until reduced by about half, approximately 5-7 minutes, until it coats the back of a spoon.
- Preheat the broiler on your oven.
- Place the bread slices on a baking sheet and broil for 1-2 minutes on each side, until lightly toasted and golden brown.
- Spread a generous amount of Saga Blue Brie on each toasted bread slice.
- Top with the macerated strawberries and drizzle with the balsamic reduction.
- Serve immediately while the bread is warm and the cheese is soft.
