Description

This BLT Pasta Salad combines the classic flavors of a BLT sandwich with pasta, featuring crispy bacon, juicy tomatoes, and fresh lettuce tossed in a tangy balsamic vinaigrette.


Ingredients

  • 8 ounces whole-wheat rotini (like Barilla)
  • 5 tablespoons balsamic vinaigrette, divided (like Newman’s Own)
  • 8 slices bacon, cooked and chopped
  • 2 pints grape tomatoes, halved
  • 8 ounces provolone or white cheddar, cubed
  • 2 cups romaine lettuce, chopped
  • Salt and pepper, to taste

Instructions

  1. Cook the whole-wheat rotini according to the package directions. Drain and place in a large bowl.
  2. Toss the cooked pasta with 1 tablespoon of balsamic vinaigrette to prevent sticking and add flavor.
  3. Add the chopped bacon, halved grape tomatoes, and cubed cheese to the bowl with the pasta.
  4. Chop the romaine lettuce and add it to the bowl.
  5. Drizzle the remaining 4 tablespoons of balsamic vinaigrette over the salad.
  6. Toss everything together until well combined. Season with salt and pepper to taste.
  7. Serve immediately or refrigerate for up to 2 hours before serving for a chilled salad.

Notes

For a vegetarian version, omit the bacon and add extra cheese or a meat substitute. This salad can be made ahead and stored in the refrigerator for up to 2 days. Add the lettuce just before serving to keep it crisp. Use your favorite type of cheese for a personalized touch.
