This BLT Pasta Salad combines the classic flavors of a BLT sandwich with pasta, featuring crispy bacon, juicy tomatoes, and fresh lettuce tossed in a tangy balsamic vinaigrette.

- 8 ounces whole-wheat rotini (like Barilla)
- 5 tablespoons balsamic vinaigrette, divided (like Newman’s Own)
- 8 slices bacon, cooked and chopped
- 2 pints grape tomatoes, halved
- 8 ounces provolone or white cheddar, cubed
- 2 cups romaine lettuce, chopped
- Salt and pepper, to taste
Instructions
- Cook the whole-wheat rotini according to the package directions. Drain and place in a large bowl.
- Toss the cooked pasta with 1 tablespoon of balsamic vinaigrette to prevent sticking and add flavor.
- Add the chopped bacon, halved grape tomatoes, and cubed cheese to the bowl with the pasta.
- Chop the romaine lettuce and add it to the bowl.
- Drizzle the remaining 4 tablespoons of balsamic vinaigrette over the salad.
- Toss everything together until well combined. Season with salt and pepper to taste.
- Serve immediately or refrigerate for up to 2 hours before serving for a chilled salad.
Notes
For a vegetarian version, omit the bacon and add extra cheese or a meat substitute. This salad can be made ahead and stored in the refrigerator for up to 2 days. Add the lettuce just before serving to keep it crisp. Use your favorite type of cheese for a personalized touch.
