Description

Crispy bell peppers loaded with seasoned ground turkey and melted cheddar. A fun twist on classic nachos!


Ingredients

  • 1 lbs (454 g) ground turkey
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.25 tsp garlic powder
  • 0.25 tsp black pepper
  • 0.5 tsp salt
  • 0.7 cups (167 ml) salsa
  • 1 cups (237 ml) shredded cheddar cheese
  • 3 organic bell peppers

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Line a baking sheet with foil and nonstick spray.
  3. Clean, dry, and core bell peppers; slice each into 5-6 vertical pieces.
  4. In a large stovetop pan, cook ground turkey in olive oil over medium-high heat until fully cooked.
  5. Let the turkey cool slightly before adding spices and salsa; combine well.
  6. Fill bell pepper halves with the turkey mixture and top with cheese.
  7. Bake for 10 minutes, or until cheese is melted.

Notes

  • For easier cleanup, line your baking sheet with parchment paper instead of foil.
  • If you prefer a spicier nacho, add a pinch of cayenne pepper to the turkey mixture.
  • These nachos can be assembled ahead of time and baked just before serving.
