Scale
- 1 cup old fashioned oats
- 1 cup whole wheat flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 1/2 cups whole milk
- 1/2 cup yogurt
- 2 eggs
- 1 tablespoon maple syrup
- 2 ripe bananas, mashed
- 1 teaspoon vanilla extract
- Butter or oil for cooking
Instructions
- Place the oats in a blender and process on high until they form a fine oat flour.
- In a large bowl, combine the oat flour, whole wheat flour, baking powder, baking soda, cinnamon, and salt. Mix well to combine.
- In a separate bowl, whisk together the whole milk, yogurt, eggs, maple syrup, mashed bananas, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
- Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown and cooked through.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve warm with additional maple syrup, if desired.
Notes
These pancakes can be made in a large batch and frozen for later use. Simply reheat in the toaster or microwave for a quick breakfast. They are sweetened naturally with bananas and maple syrup, making them a healthier option for kids and adults alike. Adjust the size of the pancakes to suit your needs; smaller pancakes are perfect for toddlers.
