Description

Fluffy waffles get a boost from cinnamon and mashed banana. Caramelized banana slices make a decadent topping.


Ingredients

  • 1 1/4 cups (296 ml) all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • pinch of salt
  • 1/2 cup (118 ml) milk
  • 1/2 cup (118 ml) vanilla greek yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 bananas, mashed
  • 1 banana, sliced
  • 1 tablespoon butter
  • 1 tablespoon honey
  • 1 tablespoon sugar
  • 1 teaspoon cinnamon
  • sprinkle of sea salt

Instructions

  1. Mix together the flour, baking powder, cinnamon, salt, milk, yogurt, egg, vanilla, and banana until smooth. Do not overmix.
  2. Pour 1/2 cup of batter into your waffle maker and cook according to the manufacturer’s instructions.

For the topping

  1. In a small saucepan, combine butter, honey, sugar, cinnamon, and salt over medium heat. Whisk continually.
  2. Once the mixture bubbles, reduce heat to low-medium. Add sliced bananas and cook for 3-4 minutes per side, until lightly browned.
  3. Immediately pour the topping over the waffles and serve.

Notes

  • Overripe bananas will yield sweeter waffles and a more intense banana flavor.
  • For gluten-free waffles, substitute all-purpose flour with a gluten-free blend. Adjust the liquid as needed to achieve the desired consistency.
  • Leftover waffles can be stored in an airtight container at room temperature for up to 2 days, or frozen for up to 1 month.
