Description

- 1 1/4 cups (296 ml) all-purpose flour
- 3 teaspoons baking powder
- 1 teaspoon ground cinnamon
- pinch of salt
- 1/2 cup (118 ml) milk
- 1/2 cup (118 ml) vanilla greek yogurt
- 1 egg
- 1 teaspoon vanilla extract
- 1 bananas, mashed
- 1 banana, sliced
- 1 tablespoon butter
- 1 tablespoon honey
- 1 tablespoon sugar
- 1 teaspoon cinnamon
- sprinkle of sea salt
Instructions
- Mix together the flour, baking powder, cinnamon, salt, milk, yogurt, egg, vanilla, and banana until smooth. Do not overmix.
- Pour 1/2 cup of batter into your waffle maker and cook according to the manufacturer’s instructions.
For the topping
- In a small saucepan, combine butter, honey, sugar, cinnamon, and salt over medium heat. Whisk continually.
- Once the mixture bubbles, reduce heat to low-medium. Add sliced bananas and cook for 3-4 minutes per side, until lightly browned.
- Immediately pour the topping over the waffles and serve.
Notes
- Overripe bananas will yield sweeter waffles and a more intense banana flavor.
- For gluten-free waffles, substitute all-purpose flour with a gluten-free blend. Adjust the liquid as needed to achieve the desired consistency.
- Leftover waffles can be stored in an airtight container at room temperature for up to 2 days, or frozen for up to 1 month.
