Description

These banana bread waffles are a delightful twist on a classic breakfast, combining the comforting flavors of banana bread with the crisp texture of waffles.

Ingredients

Units Scale
  • 1 1/2 cups spelt flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/3 cup unsalted butter (or coconut oil), melted
  • 3/4 cup milk (any kind, nut, etc.)
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas, mashed

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large bowl, whisk together the spelt flour, sugar, and baking powder.
  3. In a separate bowl, combine the melted butter (or coconut oil), milk, egg, vanilla extract, and mashed bananas. Mix until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be slightly lumpy.
  5. Lightly grease the waffle iron with cooking spray or a small amount of oil.
  6. Pour the batter onto the preheated waffle iron, using about 1/2 cup of batter per waffle (or according to your waffle iron’s instructions).
  7. Cook the waffles until golden brown and crisp, about 4-5 minutes, or until your waffle iron indicates they are done.
  8. Serve immediately with blueberry and pecan relish or your choice of toppings.

Notes

For a dairy-free option, use coconut oil and a nut milk of your choice. These waffles are best served fresh, but they can be frozen and reheated in a toaster for a quick breakfast. The batter should be slightly lumpy; overmixing can lead to dense waffles.
