Instructions
- Place berries, balsamic vinegar, and sugar/honey in a small saucepan and bring to a simmer.
- Cook, stirring frequently, until berries burst and the mixture has thickened (about 5–7 minutes).
- Let the mixture cool slightly, then place it in a container and chill in the refrigerator.
- Serve the berry balsamic compote over vanilla bean ice cream and garnish with fresh mint leaves.
Notes
- For a richer flavor, use a high-quality balsamic vinegar aged for at least 6 years.
- Adjust the sugar or honey to your liking, depending on the sweetness of the berries.
