- 4 eggs
- 1 and 2/3 cup (330g) sugar
- 5/6 cup (200ml) vegetable oil
- 1/4 cup and 3 tbsp (100ml) milk
- 1 tbsp (12g) baking powder
- 1 and 2/3 cup (310g) all-purpose flour
- Fresh or frozen unboned cherries, as needed
- Icing sugar, for sprinkling
Instructions
- Preheat the oven to 200°C (392°F). Line a 35x25cm baking sheet with parchment paper.
- In a large bowl, whisk together the eggs and sugar until well combined and slightly frothy.
- Gradually add the vegetable oil and milk, continuing to whisk until the mixture is smooth and uniform.
- In a separate bowl, sift together the baking powder and all-purpose flour.
- Slowly incorporate the dry ingredients into the wet mixture, whisking until the batter is smooth and free of lumps.
- Pour the batter into the prepared baking sheet, spreading it evenly.
- Evenly distribute the cherries over the top of the batter.
- Bake in the preheated oven for 20 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool slightly. Sprinkle with icing sugar before serving.
Notes
This cake can be served hot directly from the oven, making it a perfect quick dessert option. If using frozen cherries, there’s no need to thaw them before adding to the batter. Store any leftovers in an airtight container to maintain freshness. You can substitute the cherries with other berries if desired.
