- 2 large sweet potatoes (around 2 lbs / 900 g)
- 1/2 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp red chili flakes
- 1 tsp curry powder (I used Jamaican Curry)
- 1 tbsp (15 ml) extra virgin olive oil
- Chilled plain yogurt, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Peel the sweet potatoes and cut them into 1/2 inch thick strips along the length of the potatoes.
- In a large bowl, toss the sweet potato strips with salt, black pepper, red chili flakes, curry powder, and olive oil until evenly coated.
- Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Spread the seasoned sweet potato strips in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes, or until the fries are golden brown and crispy on the edges.
- Remove from the oven and let them cool slightly before serving.
- Serve the baked sweet potato fries with chilled plain yogurt as a dipping sauce.
Notes
- Use parchment paper to line the baking sheet to prevent sticking and make cleanup easier.
- Serve with chilled yogurt to complement the curry flavor without overpowering it.
