- 2 large sweet potatoes (around 2 lbs)
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon red chili flakes
- 1 teaspoon curry powder (I used Jamaican Curry)
- 1 tablespoon extra virgin olive oil
- Chilled plain yogurt, for serving
Instructions
- Preheat the oven to 350°F (175°C).
- Peel the sweet potatoes and cut them into 1/2 inch thick strips along the length of the potatoes.
- In a large bowl, toss the sweet potato strips with salt, black pepper, red chili flakes, curry powder, and olive oil until evenly coated.
- Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
- Spread the seasoned sweet potato strips in a single layer on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes, or until the fries are golden brown and crispy on the edges.
- Remove from the oven and let them cool slightly before serving.
- Serve the baked sweet potato fries with chilled plain yogurt as a dipping sauce.
Notes
Use parchment paper to line the baking sheet to prevent sticking and make cleanup easier. Serve with chilled yogurt to complement the curry flavor without overpowering it. These fries make a great side dish for barbecues or a quick snack.
