Ingredients

- 1 slice (1 slice) thick cut rye bread
- 1/2 avocado (1/2 avocado) avocado
- 4 slices (4 slices) prosciutto
- olive oil
- salt and pepper
- fresh lemon juice
Instructions
- In a small non-stick skillet, heat a small amount of olive oil over medium-low heat.
- Add the slices of prosciutto and cook until crisped.
- Set aside.
- Toast your bread.
- With a fork, smash the avocado onto the toast.
- Drizzle toast with a small amount of olive oil and lemon juice.
- Season with salt and pepper to taste.
- Lay slices of prosciutto on top.
Notes
- For extra crispy prosciutto, use a paper towel to blot excess moisture before cooking.
- If you don’t have rye bread, sourdough or whole wheat will also work well.
- Store leftover cooked prosciutto in an airtight container in the refrigerator for up to 3 days.
