Description

Crispy prosciutto and creamy avocado make this simple toast truly special. A perfect brunch or light lunch.


Ingredients

Scale
  • 1 slice (1 slice) thick cut rye bread
  • 1/2 avocado (1/2 avocado) avocado
  • 4 slices (4 slices) prosciutto
  • olive oil
  • salt and pepper
  • fresh lemon juice

Instructions

  1. In a small non-stick skillet, heat a small amount of olive oil over medium-low heat.
  2. Add the slices of prosciutto and cook until crisped.
  3. Set aside.
  4. Toast your bread.
  5. With a fork, smash the avocado onto the toast.
  6. Drizzle toast with a small amount of olive oil and lemon juice.
  7. Season with salt and pepper to taste.
  8. Lay slices of prosciutto on top.

Notes

  • For extra crispy prosciutto, use a paper towel to blot excess moisture before cooking.
  • If you don’t have rye bread, sourdough or whole wheat will also work well.
  • Store leftover cooked prosciutto in an airtight container in the refrigerator for up to 3 days.
